Preheat the waffle iron and grease it with coconut oil.
Combine all the dry ingredients in a bowl and keep it aside.
Mix the coconut milk and vinegar together in a separate bowl.
Simply pour content from each bowl into a blender, add the remaining coconut oil to it and process until you have a thick but smooth batter, studded with coconut.
Scoop the batter in the hot waffle iron to fill the cavities and spread evenly and cook for some time till it becomes golden brown. At this stage the waffle becomes crispy.
Serve it hot with toppings of fruits, almonds or coconut yoghurt. You may also spread some matcha milk jam for extra green tea flavour and top it with maple syrup.
